The Caramelized Apple Pancake
The signature. Caramelized apples baked right in, under a lattice of icing.

A tiny Grant Road diner with hubcap-sized pancakes, a kitchen in the middle of the room, and three generations of one family behind the counter.

The specialty pancakes come out roughly the size of a hubcap — and plenty of them leave in a to-go box.

THE ROOM & THE PEOPLE

Bobo's has been feeding Tucson since 1975 — families who first came as babies now bring their own kids, and college students who found it as freshmen come back as alumni.
Debbie Gaudern waited tables here for decades before she bought the restaurant and made it hers. Her daughter Danielle and granddaughter Katrina work the room too — three generations behind one counter. The servers are painted on the walls as Raggedy Ann dolls, and the kitchen sits right in the middle of it all, where everyone can watch breakfast happen.
In 2015, The New York Times featured Bobo's in a story on Tucson's unsung architecture. The room hasn't changed for it — same yellow tables, same hubcap pancakes, same line at the door by six.
Make sure you try the apple pancakes: HEAVEN!
The pancake was so enormous it covered the dinner-size plate and hung over the sides.
I can't believe that the early bird special (2 eggs, toast, home fries) is still only $2.99 — of course, we only used to pay $0.99, but hey, that's inflation for you.
If you haven't been to Bobo's….. run. I will order the chicken fried steak every single time.
